Easy Bean Chili
This is my favorite recipe for busy season. It is full of proteins, comforting and really easy to make!
Try this tasty freezable recipe!
2 red onions (or 3 regular ones), finely chopped
Vegetables you want for app. 3 cups (peppers, carrots, celery, sweet potatoes), chopped
1/4 cup (60 ml) olive oil
6 garlic cloves, finely chopped
3 cans (1620 ml) italian style tomatoes
2160 ml beans (can or cooked) (I use red beans)
2 Tbsp (30 ml) dried basil
2 tsp (10 ml) dried thyme
2 tsp (10 ml) dried oregano
2 tsp (10 ml) cinnamon
Salt & pepper
1/4 to 1/2 teaspoon (1 to 2.5 ml) Cayenne pepper
2 tablespoons (30 ml) chili powder
In a saucepan, soften the onions and vegetables in the olive oil.
Add the remaining ingredients and simmer for 10 minutes. Season with salt and pepper.
Serve with naan bread.
