Carrot Pupcakes

Need to keep busy during quarantine, but tired of eating bread and cake? Why not take the opportunity to spoil our 4-legged friend so that it can enjoy these carrot and peanut butter cupcakes?

These cupcakes are very soft and healthy for your doggie.

Cooking : 18-20 min

Servings : 10 cupcakes

Ingredients

  • 1 ½ cup (375 ml) whole wheat flour

  • 1 tsp (5 ml) baking powder

  • 1 tsp (5 ml) baking soda

  • 1 cup (250 ml) unsweetened vegan milk (I used unsweetened

  • soy milk)

  • ½ cup (125 ml) unsweetened and unsalted peanut butter

  • ¼ cup (60 ml) neutral oil (I used sunflower oil)

  • ½ cup (125 ml) carrot, peeled and shredded (app half a big carrot)

  • ½ tsp (2.5 ml) cinnamon powder

Preparation

  1. Preheat oven to 350F and line a muffin pan.

  2. In a large bowl, mix all the ingredients together with a spatula, being cautious not to over-mixing. If dough seems too tough, add some milk.

  3. Fill cups 3/4 of the way. Bake for 18-20 minutes until a toothpick inserted in the center comes out clean.

  4. Let cool completely before feeding to the dog.
