Pea Soup

What's more traditional than eating a good pea soup at the sugar shack? Unfortunately, it contains bacon. Here is a version as creamy and tasty, but cruelty-free!

Ingredients

  • 1 Tbsp of olive oil

  • 1 carrot, chopped

  • 1 celery stalk, chopped

  • 1 small onion, chopped

  • 1 tsp curry powder

  • 1 cup dried yellow peas

  • 5 cups of water

  • 2 cups vegetable broth

  • 1 Tbsp maple syrup

  • 1 tsp savory

  • 2 bay leaves

  • 1 tsp salt

Preparation

  1. Heat the oil in a large saucepan. Brown the carrot, onion, celery and curry for about 5 minutes.

  2. Add water, peas, other spices and maple syrup. Simmer over low heat, stirring occasionally, 45 to 50 minutes, until peas are cooked. Check the consistency of the soup regularly and add the vegetable broth as needed. For my part, I had to use 2 cups, but you may need more or less.

  3. Remove from heat and allow to cool for at least 15 minutes.

  4. Grind half of the soup in the blender, then add to the unmilled soup to make thicker.
