Ingredients

  • 3 Tbsp (45 ml) ground flaxseed

  • 9 Tbsp (135 ml) water

  • 1 cup (1/2 pound / 225 g / 250 ml) vegan margarine or butter (eg: Earth Island that can be found at Avril or Metro stores for example)

  • 1 ⅓ cups (1/2 pound / 8 ounces / 225 g / 335 ml) vegan semisweet chocolate

  • ½ cup (3 ounces / 85 g / 125 m) vegan unsweetened chocolate

  • 1 Tbsp (15 ml) vanilla extract

  • 1 cup + 2 Tbsp (280 ml) sugar

  • ⅔ cup (150 ml) all-purpose flour

  • ½ tsp (2.5 ml) salt

  • 1 ½ tsp (7.5 ml) baking powder

  • 1 ½ cups (375 ml) walnuts, diced

  • 1 cup (6 ounces / 170 g / 250 ml) vegan semisweet chocolate chips or chunks

Preparation

  1. Preheat oven to 350 F (180 C). Grease a 9 X 13 baking pan using vegetable oil.

  2. In a big bowl, mix flaxseed with water. Soak for at least 5 minutes.

  3. Meanwhile, melt together the butter, semisweet chocolate and unsweetened chocolate. You can do this step in a glass dish in the microwave at 30 seconds intervals or on top of a double boiler.

  4. Add the vanilla, sugar and chocolate mixture to the flaxseed mix. Allow to cool to room temperature if chocolate mixture is hot.

  5. Stir in the flour, salt, and then the baking powder. Mix well.

  6. Finally add the walnuts and chocolate chips and mix.

  7. Pour into the pan and bake for about 30-35 minutes, or until a toothpick in the middle comes out clean. Do not overbake!
