Oatmeal, Chocolate & Cranberry Cookies
These cookies are moist inside and crispy on the outside: the best of both worlds!
I think they’re my favorite cookies, but shhhh it wouldn’t be fair to the other ones!

Servings : 30 cookies
3/4 cup (175 ml) vegan butter, softened (ex: Earth Balance)
3/4 cup (175 ml) brown sugar
1/2 cup (125 ml) sugar
1 Tbsp (15 ml) baking powder
4 Tbsp (60 ml) water
2 tsp (10 ml) vanilla
3/4 cup (175 ml) all-purpose flour
1/2 tsp (2,5 ml) baking soda
1 tsp (5 ml) ground cinnamon
3 cups (750 ml) oatmeal
1/2 cup (125 ml) dark chocolate
1 cup (250 ml) dried cranberries (or fresh cranberries, diced)
Preheat oven to 350°F (180°C).
In a big bowl, with a whisk, cream the butter, the brown sugar, the sugar, the baking powder, the water and the vanilla.
Add the flour, the baking soda and the cinnamon and mix.
Add the oatmeal, the chocolate chunks and the cranberries and mix.
Place dough balls on baking sheets. Space the balls considering that the cookies will spread a little.
Cook for 12 minutes.
