Quick Frijoles

I discovered frijoles in Mexico, at my hotel’s buffet. My friends didn’t want to taste it, given the questionable look of brown mash. However, I and the few people who tasted it loved it! I highly recommend you to try this vegan frijoles recipe for a sustaining breakfast.

I was looking for an easy recipe to make some in the morning, but everything I found took hours to simmer. So here is my one-pot recipe for quick frijoles.

Total time : 10 min

Servings : 2 large

Ingredients

  • 2 Tbsp (30 ml) olive oil

  • 1 can (540 ml) black beans, with the liquid

  • 1 ½ tsp (7.5 ml) garlic powder

  • 1 ½ tsp (7.5 ml) onion powder

  • 1 tsp (5 ml) chili powder

  • Salt & pepper

Preparation

  1. In a large skillet, add the oil and beans. Coarsely mash the beans with a spatula. Tip: A metal spatula or spoon works more efficiently. Add the spices to the beans and mix. Unsalted beans will require more salt.

  2. Cook over medium heat for 5 to 10 minutes until it becomes a puree. Turn the mixture regularly using the spatula, so it won’t stick. Adjust seasoning as needed.

  3. Serve with bread (baguette, bagel ..) for breakfast. Also good with guacamole, salsa, vegan cheese and tortilla chips. Can be eaten in a tortilla or taco shell.
