Cranberry Vegan Baked Brie

The perfect recipe to impress guests and satisfy your cheese cravings!

Although there are several ingredients, this recipe is very simple to make and almost impossible to mess up! Several variations to this recipe exist since you can easily change the topping with dried tomatoes, caramelized onions and more!

Ingredients

For the brie

  • 1 cup (250 ml) white wine

  • ¾ cup (180 ml) nutritional yeast

  • ¾ cup (180 ml) unsweetend soy milk

  • ½ cup (125 ml) vegetable broth

  • 1 clove of garlic, minced

  • 2 Tbsp (30 ml) Dijon mustard

  • ½ tsp (2.5 ml) tahini

  • ¼ tsp (1,25 ml) pepper

  • ¼ tsp (1,25 ml) salt

  • ¼ tsp (1,25 ml) nutmeg

  • 7 Tbsp (105 ml) unbleached all-purpose flour

For the topping

  • 3 Tbsp (45 ml) cranberries

  • 3 Tbsp (45 ml) walnuts

  • 3 Tbsp + 1 tsp (50 ml) maple syrup

  • 4 tsp (20 ml) balsamic vinegar

Preparation

  1. Preheat the oven to 350°F.

  2. Put all the ingredients for the brie (except the flour) in a saucepan, stir with a whisk constantly and bring to a boil. Cook for 5 minutes over medium heat and stir regularly to make sure the mixture doesn’t stick.

  3. Stir in the flour and wait until it all thickens up (takes about a minute). If too liquid, add more flour.

  4. When ready, transfer to a caquelon or brie baker.

  5. In a small bowl, mix the ingredients for the topping. Then, add it on top of the faux-cheese.

  6. Cook uncovered at 350F for about 5-10 minutes.

  7. Serve it with bread, pickles and for the healthier version, with brocolis! I also recommend serving it with a spoon.
