Cauliflower Soup

Cold weather had arrived and all I want is to eat soups. This one is so easy to make, tasty and smooth!

  • 5 cups (1.25 litres) vegetable broth

  • 1 onion, peeled and chopped

  • 6 cups (1.5 litres) cauliflower, cut into small florets

  • Salt & pepper


  1. In a large pot, add the broth, onion, and cauliflower. Season with salt and pepper. Bring to a boil and simmer over medium heat for 15 to 30 minutes, until vegetables are very soft.

  2. Pour the soup into a blender and purée until smooth or use a hand blender.
