Radish and Apple soup

So we all went apple picking and brought back way to more apples! And you can’t always eat dessert.. so here’s a way to cook those apples for dinner!

Also, how often do you buy apples, but ultimately their taste is disappointing? Here is a recipe to use those apples and avoid waste!

Ingredients

  • 2 onions (app 2 cups), chopped

  • 2 Tbsp (30 ml) olive oil

  • 4 cups (1 litre) radishes, sliced (about 454 g / 1 lb)

  • 3 large unpeeled apples (app 4 cups), cored and chopped

  • 4 cups (1 litre) vegetable broth

  • 1 1/2 cups (375 ml) potatoes, unpeeled and cubed

  • 1/2 cup (125 ml) vegan milk (I use unsweetened soy milk)

  • Salt & pepper

Preparation

  1. In a large saucepan, soften the onions in the oil.

  2. Add the radishes and apples and cook gently for about 5 minutes, stirring frequently.

  3. Add the broth and potatoes and bring to a boil. Cover and simmer gently for about 20 minutes or until the potatoes are tender.

  4. In a blender, purée the soup until smooth.

  5. Add the milk. Season with salt and pepper. Add broth, if needed.
