Easy Jackfruit

I reproduced a delicious jackfruit recipe eaten in a Mexican restaurant in Whistler. This recipe is super simple with few ingredients and little preparation. You just have to start it in advance since it simmers for a long time.

Ingredients

  • 1 small onion, chopped

  • 3 stalks of celery, chopped

  • 2 Tbsp (30 ml) garlic scapes, chopped

  • 1 can (400 ml) jackfruit in brine, coarsely chopped

  • 1 can (398 ml) regular coconut milk

  • 1 can (540 ml) italian stewed tomatoes

Preparation

  1. Heat some oil in a pot, then add the onions and celery. Cook for a few minutes until the onions are translucent.

  2. Add the garlic scapes and the chopped jackfruit. Cook over medium heat, stirring regularly for 5 minutes.

  3. Add the coconut milk and the Italian tomatoes. Bring to a boil, then reduce heat to medium, stirring regularly. Break up the tomatoes with a spatula. Simmer for 40 minutes or until most of the liquid evaporates. * It’s therefore important to keep a good boil and to stir regularly so that the sides don’t burn or stick.

  4. Serve with rice, salsa, guacamole, beans, lettuce, tomato, green onions, tortilla chips or other according to your inspiration.
