Hummus & Sausage Pizzas

This recipe is perfect for busy evenings! Ready in just 15 minutes, it’ll please the whole family.

It's super versatile too, so don't hesitate to switch ingredients and test different combinations!

Ingredients

  • 4 vegan sausages (350 g), spicy or smoked, broken into pieces (I used Gusta Montreal sausages)

  • 1 Tbsp (15 ml) vegetable oil

  • 4 pita breads

  • 6 Tbsp (90 ml) garlic hummus

  • ½ small red onion, sliced

  • 20 Kalamata olives, sliced in 2

  • 4 Tbsp (60 ml) marinated eggplant

  • Fresh cilantro, to taste

Preparation

  1. Place the grill at the center of the oven. Preheat the oven to broil.

  2. In a nonstick skillet, heat the oil. Cook the sausage pieces over medium-high heat for about 5 minutes.

  3. Place the pitas on baking sheets. Spread a thin layer of hummus over the pitas (about 1 ½ Tbsp per pita). Add the sausages, onions, olives and eggplants.

  4. Bake for about 3 minutes or until the pitas are toasted on the rim. Check frequently to avoid burning the pitas.

  5. Serve immediately, sprinkled with cilantro. It’s possible to keep the pizzas in the refrigerator for about 5 days and reheat them in the oven at broil, without the cilantro.
