Three Bean Salad

A vegan meal salad with 3 types of beans rich in fiber and protein!

Ingredients

  • 3 cups (750 ml) green & yellow beans, cut into 1-inch pieces

  • 1 cup (250 ml) red beans (cooked or canned)

  • 1 cups (250 ml) chickpeas (cooked or canned)

  • 2 stalks of celery, chopped

  • ¼ red onion, chopped

  • 3 Tbsp (45 ml) olive oil

  • 3 Tbsp (45 ml) apple cider vinegar

  • 1.5 Tbsp (22.5 ml) maple syrup

  • ¼ tsp (1.25 ml) salt (only if the legumes have no added salt)

  • Pepper, to taste

Preparation

  1. Cook the green & yellow beans al dente (I recommend steaming).

  2. Combine all the ingredients in a serving bowl. Season to taste.

  3. Serve cold or to room temperature.
