Ingredients

For the cheeze fondue

  • ¾ cup (190 ml) white wine

  • ¾ cup (190 ml) nutritional yeast

  • ½ cup (125 ml ) vegetable broth

  • ¾ cup (190 ml) vegan milk (ex : unsweetend almond or soy milk)

  • 1 Tbsp (15 ml) white miso paste

  • 1 clove of garlic, minced

  • 2 Tbsp (30 ml) Dijon mustard

  • 1 tsp (5 ml) tahini

  • ½ tsp (2.5 ml) salt

  • 1 pinch pepper

  • 1 pinch nutmeg

  • 4 Tbsp (60 ml) flour

For dipping

  • Baguette

  • Pickles

  • Mushrooms & other vegetables you like

Preparation

  1. Put all ingredients (except for the flour) in a pot and cook for about 5 minutes stirring regularly.

  2. Then stir in the flour and, using a whisk, stir the mixture until it all thickens up. If it's too thick add some more milk. If it's too thin, add more flour.

  3. When it's ready, you can either transfer it to a caquelon or just use a regular bowl instead. However, it's better to use a real fondue pot, a so-called caquelon, as it keeps the cheeze sauce hot.
