Mac & Cheeze (not boring)
I love this simple, quick, comfort food recipe!
It’s better to eat it right away, than for lunch, because it doesn’t taste as good when warmed up. Kind of like warmed Kraft Dinner.

Servings : 4
1/2 cup cashews
375 g macaroni
1 ½ cups vegetable broth
1/3 cup cornstarch
1/3 cup nutritional yeast
¼ cup vegan margarine
1 Tbsp maple syrup
1 tsp apple cider vinegar (or balsamic vinegar)
1 tsp smoked paprika
1 tsp onion powder
1 tsp garlic powder
Salt & pepper, to taste
1 tomato, diced
2 green onions, finely chopped
Soak cashews in water for at least 2 hours or overnight.
Cook the pasta, then drain. Set aside.
Blend cashews, vegetable broth, apple cider vinegar, maple syrup, margarine, cornstarch, nutritional yeast and spices.
Put back the pasta in the pan and add the sauce, the tomato and the green onions. Warm over medium-low heat on the stove.
