I just invented this pasta carbonara recipe because I had a big craving for it! It’s really the perfect comfort food!!! And as good as the original.

400 g pasta (I used whole wheat spaghetti)
3 Tbsp (30 ml) olive oil
1 white onion, chopped
3 cloves of garlic, minced
1 package (156 g) of vegan bacon, diced (eg : Yves)
2 cups (500 ml) soy cream (eg : Belsoy found in the refrigerated section at the grocery store)
1 tsp (5 ml) white miso paste
1 Tbsp (15 ml) nutritional yeast
Optional: vegan parmesan (eg : Earth Island)
Cook pasta according to package directions.
In a skillet, fry bacon in 1 Tbsp of oil. Add water to soften. Cook for about 5 minutes.
Meanwhile, in a large skillet, saute the onion and garlic in 2 Tbsp of oil until brown (about 5 minutes).
Add cream, miso, yeast, pepper and bacon and cook for 2 minutes.
Add the pasta to the sauce and mix well. Sprinkle with parmesan if desired.
