Pasta Carbonara

I just invented this pasta carbonara recipe because I had a big craving for it! It’s really the perfect comfort food!!! And as good as the original.

Ingredients

  • 400 g pasta (I used whole wheat spaghetti)

  • 3 Tbsp (30 ml) olive oil

  • 1 white onion, chopped

  • 3 cloves of garlic, minced

  • 1 package (156 g) of vegan bacon, diced (eg : Yves)

  • 2 cups (500 ml) soy cream (eg : Belsoy found in the refrigerated section at the grocery store)

  • 1 tsp (5 ml) white miso paste

  • 1 Tbsp (15 ml) nutritional yeast

  • Pepper

  • Optional: vegan parmesan (eg : Earth Island)

Preparation

  1. Cook pasta according to package directions.

  2. In a skillet, fry bacon in 1 Tbsp of oil. Add water to soften. Cook for about 5 minutes.

  3. Meanwhile, in a large skillet, saute the onion and garlic in 2 Tbsp of oil until brown (about 5 minutes).

  4. Add cream, miso, yeast, pepper and bacon and cook for 2 minutes.

  5. Add the pasta to the sauce and mix well. Sprinkle with parmesan if desired.
