Peanut Tofu

This recipe is my favorite to make when I invite friends and family who are not used to eating vegetarian to dinner. And everyone likes it!

This recipe is very simple to make and has several possible variations. Indeed, it’s a meal that you can make using what’s left in your fridge, since you can put all the vegetables you want (zucchinis, cauliflower, peppers ...). You can serve it on rice, with bread or as is! I have a friend who asked me to make her "the recipe that doesn't taste like tofu" by referring to this one. It's up to you to try!

TIPS: Cooking broccoli (or cauliflower)

  1. Healthy method: Steam using a steamer, which allows to cook a larger quantity, will take 10 minutes and is the method which retains the most nutritional qualities

  2. Lazy method: In the microwave, put the bouquets in a bowl with a little water for a few minutes. Retains the nutritional qualities a little less than method 1.

Servings : 4-6

Ingredients

Sauce

  • ½ cup (125 ml) peanut butter

  • 1 Tbsp (15 ml) soy sauce

  • 1 Tbsp (15 ml) hoisin sauce

  • 1 Tbsp (15 ml) rice vinegar

  • 1 Tbsp (15 ml) sweet pepper sauce

  • Sugar, to taste

  • Water, according to desired consistency

Stir fry

  • 1 block (350 g) extra-firm tofu, diced

  • 1 broccoli, in small bouquets

  • 5 Tbsp (75 ml) olive oil

  • 1 package (227 g) mushrooms, sliced

  • 2 peppers, diced

  • 1 onion, coarsely chopped

  • 2 green onions, chopped

  • ½ cup (125 ml) peanuts, chopped

Preparation

  1. Cook the broccoli.

  2. Combine all the ingredients for the sauce in a bowl. Add water until desired consistency (take into account that cooking vegetables creates a little water).

  3. In a large non-stick skillet, cook the tofu in 3 Tbsp of oil until it begins to turn yellow and crisp. Turn it regularly with a spatula. Remove from skillet and set tofu aside.

  4. In the same skillet, cook the peppers in 2 Tbsp of oil about 2 minutes. Add the onions and cook for about 2 minutes. Add the mushrooms and cook until the vegetables are al dente. Finally add the green onions for 1 minute.

  5. Add the tofu and the sauce to the vegetable mixture and heat everything over low heat. Sprinkle with peanuts.
