Mashed Chickpea Salad Sandwich

It's almost back to school and vegan lunches are no more complicated than others! No reason not to eat healthy when going back to school or work.

This mixture is easily customizable. You could add diced peppers, olives, or replace vegenaise with hummus.


VEGENAISE: it means vegan mayonnaise. You can find Hellman's in all grocery stores or Earth Island in April. You can also prepare it yourself.

Servings: 4 sandwiches

Ingredients

  • 2 cups chickpeas, cooked or canned
  • 1/2 cup carrots, diced
  • 1/2 cup celery, diced
  • 1/4 cup red onion, diced
  • 1/3 cup pickles, diced
  • 2 Tbsp Dijon mustard
  • 2 tsp lemon juice
  • 3 Tbsp vegenaise
  • 1/4 tsp garlic powder
  • Pepper, to taste

Preparation

  1. In a medium bowl, roughly mash the chickpeas with a fork. Start with half of them to make it easier to mash.
  2. Add the remaining ingredients and combine. 
  3. Serve on the bread of your choice or in a tortillas. If desired, add some leafy greens.
